It is called Spokane Pizza. This writer says it is not for kids (excuse me?) our kids grew up eating this delightful and easy dish and love it to this day.

This morning I had one of those times when you have something in your mind to cook, but not all of the ingredients. This is when I look into my files for recipes I made when the kids were still at home. I came across this one, and had all the ingredients. I wanted to share it again for anyone who has not tried it with my tweaks.

*I make the meat mixture in the morning, always add fresh garlic, and refrigerate.

*I add our favorite taco sauce, to taste, and some good melting cheese to the refried beans. Mix thoroughly, set aside.

Heat in microwave just before assembly. Adding crispy bacon is great too, if you want the extra step.

*Our kids loved black olives, so I use a can of whole and cut them in half.

*I shred cheddar and jack cheese, put in a bowl, cover, and refrigerate until assembly. I never use pre-shredded cheeses f from the store as I feel they lose their flavor, and it takes so little time to shred a pile.

Enjoy!

It then comes together fast when your are ready to serve.
