I'm tempted to finally get a crockpot, but can you low carb with one?

All these years and I've never owned one. Mom had one when they first came out, but don't recall using it much or what came out of it. In my *mind* crockpots are something you toss meat/taters in and you come out with something pot roasty or wet casseroley.

Since I'm currently low carbing, can one make low carb food in one?

Any suggestions on what to look for when buying?

Any low carb crockpot recipes?

 
I've had quite a bit of success substituting turnips or rutabagas for the potatoes called for in

many slow-braised recipes. Comes really close in taste AND mouth-feel. Otherwise, you're simply braising slowly in a slow cooker. Nothing that should or shouldn't be different when lo-carbing. If you don't want to use wine or fruit juices, use water or stock. Bueno suerte.
