I'm trying to figure out how to make a shrimp pate with butter. the recipes I've found just

don't grab me. has anyone made this type of pate?

I can do the basic, shrimp, softened butter and food processor. what I'm considering adding to that is some garlic, nutmeg annnd? maybe lemon juice? I've seen everything from brandy to cream sherry added into the mix. maybe a hint of white wine or cognac? garnish with chopped scallions?

any input will be appreciated. TIA smileys/smile.gif

 
I saw that recipe and kinda dismissed it cause of the mayo. looking at it again, it does sound

good. I may make two different ones as I have a thing for one with just butter and some kind of spices.

You know, that's the only thing I didn't like about it - I'm not a mayo person either - Maybe just

use a tiny bit or omit it altogether and substitute something else? Meanwhile, don't forget to invite me to your next dinner party. smileys/smile.gif

 
I do like shrimp salad and that has mayo. I think the recipe is worth playing with.

as for the butter one, I was just thinking that I could use garlic and parsley and maybe a touch of cayenne, like you would do to make scampi. the other thought is butter, a bit of white wine, garlic and capers, like a piccata. I'm looking for a nice "clean" tasting pate.

some thoughts:

on your "other one", maybe mix or sub the wine with lemon juice.

herbs:
dill and chervil
tarragon.

and btw, rvb's adventures in obscure health problems (remember the elevated copper count) is hyperkalemia or high potassium. if you google it, look for catch phrases like "muscle spasms" and "cardiac arrest". definite good news is that i lived through the treatment (ya know?, alla this cark gets weary after a while.) since the treatment, my energy level has increased enough that i have high hopes for cooking a bangup german meal for christmas. luckily, i can spread the prep over 2 or 3 days.

still don't know the cause of the headaches, but the frequency and severity have both dropped semi-bigtime, so that's a big help.
