Impulse buy- TJ's Lacey Cookies sandwiched with dark chocolate. TDF!

Are you talking about the bitter chocolate coated Florentines over the frozen fish counter? ??

I pine for those!

Case in point: I went to NYC for my birthday, armed with Trader Joe Florentines, assorted bittersweet chocolates, ready to tear into into on a full fledged carb holiday.

I went to Teuscher's in Rockefeller Center to buy chococlates as I always do. And I noticed the Florentines. Hmmmmmmmmmmmm. Must be great.

Bought and sold for the outragagous prices they charge.

Two days later we finally got to the Teuscher Florentines. They were sad, mealy, and soggy, and a huge disappointment. Then, I pulled out Trader Joe's Florentines and they were perfect, bittersweet chocolate crust on the crunchy cookie. And there was no question which I preferred.

 
I have made them but I can't remember the amount. it's amazing how crisp they stay and for how long

even in humid Hawaii they stayed crisp.

 
Cyn, I have my notes in front of me...it makes 68 cookies, or 34 sandwich cookies

1 tsp. batter makes a 3" cookie. Be sure and leave plenty of room for them to spread on your cookie sheet!

It says to butter the foil but they didn't stick when I failed to butter it...so you don't have to go overboard with the buttering.

When spreading on the chocolate, go easy - less is better in this case as it will ooze through the holes if you are putting on too much.

 
Yes, I was really surprised with the crispness too! Oh, and they look JUST like TJs laceys

I checked them out in the store today and they look identical to this recipe smileys/smile.gif

 
Good question - I have the notes above the 'double recipe' part and I don't remember

ever making the double recipe...so I'd say it's for a single recipe. It really goes a long way!
