In case I never posted this before, one of my favs (Open-Faced Maple Chicken Salad Sandwich)

is:

1/2 lb cooked chicken, diced

mayonnaise, to taste

2 tsp maple flavoring (not syrup)

salt and pepper, to taste

1 tsp onion powder

2-3 ribs celery, chopped

1/4 cup chopped walnuts

Combine mayonnaise with maple flavoring and spices. Add chicken, celery and walnuts and mix well; spread on one slice whole wheat bread topped with sharp cheese crumbles and grapes. My breakfast this morning.
