That says it all! I just finished chopping mushrooms for Joe's friend's gravy REC--used his brine &
turkey roasting recipe again this year for the bird which is currently in the oven. I used all 3 for last year's Thanksgiving festivities when we entertained my husband's side of the family. Delicious! Joe, please tell Gary THANK YOU for sharing, and I thank YOU for passing his recipes along to all of us here. Last year I got a big kick out of the fact that one BIL actually took a 3rd helping of the Shiitake Mushroom Gravy and ate it ALL BY ITSELF because he thought it was so good. Now I also love gravy, but have never eaten it without drizzling it over something (meat, dressing, etc.). Leave it to Bob!
Next on my list is to finish the assembly for charlie's Grandma's Bread Stuffing recipe. DH's family raved about that one, too. Bless charlie anyhow. Without that man, I would not be able to crank out consistently decent caramel today. He was the best!
This year I am making the same 3 recipes from Gary and charlie to take to share with my side of the family so we'll be packing up in a few hours to drive to northern Indiana. My niece and her husband are handling the rest of the meal.
I want to add that all the rest of your are the best, too! I'm very thankful I happened to stumble across Gail's site all those many years ago. You have posted so very many excellent recipes AND helped me troubleshoot whenever I've run into a brick cooking wall.
Enjoy your holiday with family and friends, and work hard to ignore the curmudgeons! (My brother will be one at today's meal...a picky eater...won't even try new things. Ugh.) Pretty much every family and circle of acquaintances has at least one. I try hard not to focus on that one single person (or persons) who drives/drive me nuts because he/they don't appreciate good food, and instead I concentrate on the several who appreciate the time and effort it takes to crank out mouth-watering homemade.

I have to get his brining technique because Jacques won't shut up about the turkey, and he doesn't even like turkey. I had tried this same recipe years ago and though the gravy was the best, my bird was dry--not so last night. It probably also helped that we were running behind on side dishes...
