And I love it. Perfect One Dish Dinners by Pam Anderson. FYI, she also has a blog, http://threemanycooks.com/ as well.
It is set up so you have meal plans: an appetizer (or starter), entree, salad and dessert. This week we had friends over and I did the Mango Avocado Guacamole, Chicken Jerk Chili and an Arugula Corn Scallion Black Olive salad. I skipped the Perfect Cupcake dessert in favor of ice cream. I had my doubts about the mango guacamole but it was surprisingly good. We all went back for seconds on everything (I doubled the chili and froze half for later).
She gives alternatives for each recipe, with the Jerk Chicken Chili the alternative was a vegetarian version. Highly recommend this book and very grateful my friend recommended it.
