In the kitchen on this cold snowy day...

I was out of town last week and around a lot of people in large enclosed spaces. Since I normally work at home and don't see many people in a typical week, I was exposed to a lot of germs I don't normally get and subsequently came down with some sort of bug and the only thing I could think of was homemade chicken noodle soup.

I cleaned and put a chicken in the soup pot in ice water last night so that in the morning, all I had to do was turn the burner on when I got up to let the dogs out. Went back to bed to let it simmer on low and 2 hours later had a luscious cooked chicken and the beginnings of a nice stock.

I pulled out the tender chicken, picked it, threw the carcass back into the pot, and left it to simmer for another 2 hours. Then I strained the stock, returned it to the pot and added the onions, garlic, celery, carrots, parsley, poultry spice, sherry, salt, and pepper and set it back on the stove to simmer the vegetables tender.

Meanwhile, I put some German porcini noodles on to cook, made chicken salad with the breast meat, chopped up the rest then added it to the soup pot with the cooked noodles and a bag of frozen peas.

And the bowl of steaming hot, homemade chicken noodle soup I just had for lunch with a half sandwich of homemade chicken salad was just the ticket.

The kitchen is trashed, but I am going back to bed happy with a cup of hot tea.

 
Just try leaving them outside! LOL The complaints are loud and many...

if they are not let in quick enough when they are finished.

Thanks all for the well wishes. Homemade Chicken Soup is such an amazing restorative. It was worth the effort of standing up for the time it took to have it. Luckily, I had all the ingredients at hand so it went fairly smoothly.

We soooo love chicken soup!

I made a batch of chicken noodle and a small batch of green lentil before the big Midwest snow as well! Used bones, skin, wings and other "discards" from 2 Costco rotisserie chickens, fortified with carrots, onions, celery, spices, and Trader Joe's Organic Low Sodium Vegetable broth box - my secret ingredient. Joked with Dh that, although I love the rotisserie chicken, my real motive for buying the chickens is always for the soup smileys/wink.gif Colleen

 
Ha! I know that all too well. I'm constantly grabbing bones...

from guests plates who are trying to throw them away. What are you doing!? That goes in the soup bag!!!

No bone is unappreciated in this house.
