Baking powder doesn't exist, here. Neither does cream of tartar. But baking soda does! And buttermilk! So can I just combine these last two to substitute for baking powder? In what proportions?

I just made a very flat cake, so I would love some insight from you McGee fans out there, or substitution gurus...

Can you get buttermilk powder in the baking section at your store?

I checked out the link listed above and it suggested 1/4 tsp. baking soda and 1/2 cup buttermilk. If you can get the powdered buttermilk, for 1 teaspoon baking powder, you could use:

1/4 tsp. baking soda
2 Tbs. buttermilk powder.

My husband said baking powder does exist here; I just looked in the wrong location.

Why they put the flour and baking powder together, and in a separate part of the store from all the *other* baking stuff, I'll never know!
