In the past there has been some discussion about not being able to get a wok hot enough...

I was watching Good Eats tonight, and Alton Brown used a turkey fryer propane unit to heat up his wok. He had the wok glowing with heat.

I am very afraid of lowering a huge turkey into a boiling vat of oil, but to use the heat source as a heating device, I think I may have to buy one now. And in the summer when it is so hot here, I could actually make chicken stock outside in it. I think I just talked myself into buying a turkey fryer.

At a local folk festival each summer....

the food booths mostly use the propane "cajun cooker" or turkey fryer units to cook huge woks of fried rice, Indonesian noodles and other dishes.

DH is contemplating getting one so he can brew up his beer batches in a flash without heating up the kitchen in warm weather.

I think it would also be great for stove-top "clambake" also. (recipe is in the Group Project New England Weekend posts)

We use these cookers for big batches of fried halibut. works great.

and for cooking big old Bering Sea Crab Legs.
