Thanks Gay, a couple of questions...did you use fennel and/or raab? Do you think a parm rind would

add anything to the mix? I have a lot of them to use up.

 
I used the rab and fennel and I think the parm rind will add extra flavor. If you try it I hope

you like it. My son was visiting last night and had two bowls.

I was a little concerned about the bean and tomato puree as it was a weird color and consistency but it cooked down into a beautiful broth. I used vegetable broth instead of water, and sprinkled some cheese over my toddler's portion.

I used the butternut squash instead of carrots and the celery instead of fennel (my husband was doing the shopping and couldn't find fennel). I wish I'd remembered to throw a parm rind in; oh, well, next time.
