Indian themed book club...

I know I've asked you lovely foodies for advice on the cocktail, and now I'm firming up my menu.

This is what I have:

Pimm's Cup

Wine

~Chicken samosas with a yogurt dip

~Wonton cups filled with Indian chicken salad (peanut butter, green curry paste, Major Grey's chutney, etc)

~Grilled meatballs with Indian spiced yogurt (same used for samosas)

~Naan....will try to make!!!

(I was going to make chicken skewers, but noticed I had 3 chicken items!)

Then some desserts:

French apple torte

Pumpkin bars

Truffle brownies

Cream cheese filled strawberries

Any other ideas???? Thank you!

 
KHEER!! My favorite dessert in the world and tweaked recipe from my favorite Indian restaurant >

Best served very cold and can be made several days ahead:

KHEER
(from Muhammad Mubeen)


½ cup rice, washed and drained (I used basmati)
1 liter milk
4 Tbs. blanched ground almonds
½ cup evaporated milk
1 cup cream
1 cup sugar
¼ tsp. cardamom powder (2 pods, crushed seeds)
3 or 4 drops rose essence (optional) or pinch of saffron (optional).

2 Tbs. raisins
3 Tbs. chopped pistachios

Bring the rice and milk to boil in a heavy pan, cover and allow to simmer for an hour or until very soft and mushy, stirring often to prevent from sticking to bottom of pan. (note: try using rice cooker next time?) Mash roughly with a stick potato masher.

Mix almonds with evaporated milk, cream and add to rice. Stir until thick and creamy.

Add the sugar and stir to dissolve. Take off from heat. Sprinkle cardamom powder and rose essence (or saffron) and stir.

Chill. Garnish with raisins and chopped pistachio.

Cheezz, I wish I could stomach the thought of making rice pudding, but (probably since I wasn't raised on it) it sounds icky. I probably need to have to actually eat it to find out if I'm a fan, though! Thanks for sharing smileys/smile.gif

 
I do have some new demitasse cups, Cheezz...

...that might make a lovely presentation with the kheer. I'll have to think about it!!!
