Ingredients searching for a recipe: Pumpkin, Pork Tenderloin, Black Beans

I have these things on my counter to start dinner, the beans are simmering after soaking all day, the pork has been cubed and is sauteeing. Pumpkin is still intact. I have lots of dried new mex and paprika chilies, garlic and onions and was going off in a cumin-infused southwestern stew direction to be determined topped with cilantro to combat this blah rainy dark gloomy day.

But, I'm still thinking about ways to go with this if anybody has any ideas or great recipes.

Can't find a rec; but I am thinking saute garlic, etc, pork medallions, Can you mash pumpkin?

Black beans w/ cilantro?

Let me know what you come up with!!

I'm afraid I didn't leave much time for response as dinner preparations were in progress. I ended up making a thick stew of pork, pumpkin chunks, black beans, corn, and tomatoes, with new mex chilies, cumin, paprika (fresh from the garden) and lots of garlic and onion. I topped it with a sprinkling of grated cheddar and chopped cilantro. I did buttermilk cornbread with fresh corn and masa to go with the stew. It was very yummy and really hit the spot.

 
I used to do all of that with leftover pork roast. Added poblano peppers, cilantro & sour cream.

seemed to work so well together, by accident. It was one of my experimental leftover recipes that my husband loved.
