Interesting Irish Soda Bread Recipe made with Beer

Irish Soda Bread

"To prevent the dough from sticking to your hands, coat them with cooking spray before you start kneading."

1-1/4 cups beer

4 cups all purpose flour

2/3 cup sugar

1 tablespoon baking powder

1 tablespoon caraway seeds

3/4 teaspoon salt

1/2 teaspoon cracked pepper

1 cup raisins

1/4 cup butter, melted

2 eggs

Let beer stand at room temperature until flat. 20-30 minutes. Preheat oven to 350 Degrees F. Coat baking sheet with cooking spray. In large bowl combine flour, sugar, baking powder, caraway seeds, salt and pepper. Stir in raisins. Stir in beer, butter and 1 egg until a dough forms.

On floured surface, knead dough until smooth. Shape into round loaf. Place on baking sheet. With kitchen scissors or serrated knife, cut 1/2" deep X into top. Lightly beat remaining egg; brush over dough.

Bake 55 minutes or until loaf sounds hollow when tapped on bottom. Remove from pan. Cool on rack.
