Is it ok to freeze scallops? I purchased 2 lbs on Sat that I will not be using today. (m)

They smell fine. I was supposed to have a family dinner last night, but because of t-storms, our party was cancelled.

Can I freeze them? How would I defrost them? Fish is new to me, In fact this was my first time attempting to cook scallops. Will they taste the same? Or, can I cook them tomorrow? I purchased them at Kings, they said they would be good for "a few days"....

Thoughts?? (TIA)

It's okay to freeze them and I think you are right on the deadline...

The main thing is probably to do something with them today - most seafood is good about three days - usually not longer.

It will affect their quality a little but depending on where you live, most of the scallops they get in stores are previously frozen anyway (which is why refreezing will affect them the most). I buy frozen scallops all the time so they do freeze extremely well.

Either vacuum pack them or freeze them and then dip in water to coat them or freeze in a little water because they will get freezer burn very easily. I just thaw them in the fridge overnight or carefully thaw in the microwave thought you won't get them fully thawed without the edges starting to cook when you do them that way - then I finish by putting in a bowl with room temp water running over the package until they finish thawing.

Some people think it improves their flavor to soak in milk after thawing and prior to cooking and I've done that but can't say that we really noticed much difference.

Be sure to drain and dry them very good to get a nice carmelization on them and to get any kind of breading or batter to stick to them very good. Be sure to remove the little muscle on the side as it is tough.

 
When you thaw them you might press them between paper towels

with a plate on top to really get the moisture out so they will brown, as Missy mentioned above.
