Is there a thread on make ahead meals?

I am looking for ideas for a dinner meal that I can make a full day ahead with very little time required to serve it the next day. I have family coming and the high school junior is in a swim meet. He will need to eat as quickly after the meet as possible and will need (I assume) protein and carbs. There is a much younger (9 or 10 year old) daughter who is not a big meat eater plus the two parents. I will be in meetings from 8 am until after the swim meeting so must prepare everything the day before. Any ideas or previous threads?

 
What about a vegetarian lasagna or spaghetti? Coq au Vin is always best served the next day.

 
My summer go-to for guests is Salade Nicoise.

This is Emeril's version, but you can skip the anchovy dressing if you think the kids won't eat it. A vinaigrette is fine.

The beauty of this is that it can be prepped a day in advance, scaled up or down depending on how many you need to feed, and arranged on a giant platter so that picky eaters can avoid the olives. smileys/wink.gif It's meat-free but it does have potatoes for the swimmer. smileys/smile.gif (Although I think their main carb-loading is pre-meet, not after...?) Add a couple baguettes and some cheese before or after, and you should be set. smileys/smile.gif

Cooked ahead of time. Put in crockpot morning of event, with a splash of the vinegar and juices. Worked great. Buns and sauces next to it, had Costco potato salad, marinated cukes, and fruit.

 
I usually just wing it and try to remember all the ingredients. Don't know why I linked Emeril's!

Thanks for the link to Ina Garten's, though--that does look like a great vinaigrette!
