It was great, and tried to find it again while I was bringing over files from Gail's. It was the best thing I ever made, and I have been looking for it ever since.

Main ingredients were chicken, cream cheese, maybe mushrooms, and it may have been a crockpot recipe. Maybe. I know it was very creamy and probably full of fat, but we can make adjustments :eek:) It was about 5 years ago, but the post might have been long before that.

Maybe some day I'll find it, but can anyone help me out in the meantime? Thanks!

Nlb's Chicken Noodle Casserole
(we should put this in swap favorites file)

Chicken Noodle Casserole
1/2 c plus 2 T butter, divided
1/2 c all-purpose flour
3 c rich chicken stock
2 c sour cream
1/2 c white wine
dash nutmeg
salt and freshly ground black pepper, to taste
1 lb egg noodles, cooked 6 to 7 minutes
4 1/2 c cooked chicken, cut into pieces
1 lb mushroom, sliced and cooked
1 c soft bread crumbs
1/2 c Parmesan cheese, freshly grated

Preheat oven to 350 degrees F.

Clean and slice the mushrooms and saute in a 2 tablespoons butter until soft and slightly browned, about 7 minutes.

Remove crusts from 2 or 3 slices of fresh bread and with steel blade in food processor, process bread until soft crumbs form.

Melt 1/2 cup butter in a saucepan, over medium heat, and whisk in the flour. Cook 1 minute. Gradually add stock, sour cream and wine. Cook until thickened, stirring constantly. Add nutmeg, salt and pepper to taste and blend well.

Arrange the noodles in an ovenproof casserole. Layer chicken, mushrooms then sauce to cover. Melt remaining 2 tablespoons butter and mix with the bread crumbs. Top the casserole with the buttered crumbs and sprinkle with Parmesan. Bake for 30 minutes, or until heated through and bubbly. Serve with buttered green beans

This is true comfort food! YUM!!! I think that when I made it, (m)

added lots of extras...The recipe is very forgiving. If I recall I added onions, carrots, peppers, etc...basically cleaned out the fridge...

1 pound pinto beans
1 can navy beans
2 cans garbanzo beans
2 tablespoons olive oil
2 large onions -- chopped
6 cloves garlic -- chopped
1 tablespoon cumin
12 cups water or chicken
broth
1 tablespoon oregano leaves
1 can green chiles
1 can Rotelle tomatoes
1 can green enchilada sauce
4 cups cooked chicken --
cut up
2 tablespoons chicken bouillon
1 cup roasted red bell
peppers -- chopped
8 ounces cream cheese --
chunked
1 bunch fresh cilantro
leaves -- chopped

Saute onions and garlic in olive oil until
translucent. Add cumin and oregano and
saute until fragrant. Add beans, Rotelle,
chiles, water, chicken bouillion and
broth. Bring to a simmer. Simmer until
beans are tender. Add enchilada sauce,
chicken, red bell peppers, cilantro
and cream cheese. Simmer for 20 mintues
until flavors are well-blended. Serve with
good quality tortilla chips. Freezes well

KING RANCH CHICKEN CASSEROLE

1 whole chicken --
cooked and boned
1 can cream of mushroom
soup, condensed
1 can cream of chicken
soup, condensed
10 ounces Rotelle tomatoes
with chiles, can
1/2 can chicken broth
12 corn tortillas --
cut in quarters
1 onion -- chopped
2 cups cheddar cheese --
grated
1 small can diced green chiles

Cook the chicken, and bone it. Cut into
pieces. In a large bowl mix
soups, tomatoes, chiles, broth and set
aside. In a 2 1/2 quart greased
casserole place half the chicken, 1/2 corn
tortillas, 1/2 onion, 1/2
cheese, and 1/2 of the sauce, repeat layer,
ending with cheese. Bake
uncovered for 1 hour at 350 degrees

 
No, thanks Maria and Ang, but neither of these are it...

I think it might have had "creamy" in the title, and may have had sherry in it too. But when I did a search on Kitchen Seek, nothing came up. COme to think of it, maybe it got left behind when they made the switch. I know many recipes were lost, at least last time I checked.

Hi Dawn. Could it possibly be this one by Cathy Z?

It has sour cream, not cream cheese and not really a crockpot recipe but I searched every which way trying to find it for you (cuz I love searchin' for stuff...it's so fun and rewarding...most of the time). If this isn't the one I'll keep lookin' but I think I'm going to have to make this one for sure because it's speaking to me. :eek:)

CATHY’S SOUR CREAM MUSHROOM CHICKEN
(serves 4)
My version of my Mom’s recipe.

4 cloves garlic, peeled
1/3 cup oil
1 chicken, washed and cut in 8 pieces (or you
can use skinned, boned pieces but the flavor
is better with bones and skin.
1 pint sour cream
1 chopped onion
1/2 lb mushrooms, sliced
1/4 cup sherry (optional)
1 C flour to dredge chicken, combined with
1tsp each: paprika, pepper, salt, Beau Monde
(or celery seed), and thyme

Heat oil in fairly large pot. Brown garlic in
oil, then throw garlic away.
Dredge chicken in flour/herb mixture. Brown
in oil on all sides.
Drain excess oil off and turn heat to LOW.
Add onion, mushrooms, and sour cream.
Cover and cook one hour or so. Make sure the
heat is LOW or the sour cream will curdle.
Just before serving, add the sherry and
correct the seasoning.

I think I found it!! REC:

Cream Cheese Chicken

1 chicken, cut up
2 T melted butter
salt and pepper to taste
2 T dry italian salad dressing
1 can cream of mushroom soup
6 oz cream cheese, cubed
1/2 cup dry white wine or sherry
1 T dried chopped onions

Brush chicken with butter and sprinkle with salt and pepper. Place in a crockpot and sprinkle dry mix over all(could be put in the oven with all ingredients and baked, covered with foil). Cover and cook on low 6-7 hours. About 45 minutes before done, mix soup, cream cheese, wine and onion in a small saucepan. Cook until smooth. Pour over the chicken and cover and cook another 45 minutes. Serve with rice or noodles.

Note: I have added the sauce ingredients to the crockpot at the beginning and it turned out just fine. Also have added some mushrooms and garlic. It's a good basic recipe to play around with.

I think I tweaked it quite a bit, but the combination of the ingredients here is just great! Anyone who likes chicken will love this one.

 
Actually, I did not do a search. I had a print-out from a long time ago and stumbled upon it

while looking for the recipe for cream cheese and olive penguins to decorate a cheese ball which I made to look like an igloo---can I tell you what a hit that was!! The penguins were so very cute and I even put some scarves around some of their necks using roasted red pepper strips. Too Too cute and timely this year with the March of the Penguins movie that most everyone saw. Anyway---just stumbled upon my printed out copy on the casserole.
