I don't know if I'm losing my google touch, but I can't find anything close to what I'm looking for. I want to make chicken riggies (a local thing, pieces of boneless chicken breast in a sauce, piled on top of rigotoni, and cheese).
I found a You-tube demo of it but he says his is a "secret" sauce (restaurant), and all the others I've found are red, like marinara sauce. Even the one linked to a recipe on the same page as his You-tube link at wikipedia at http://en.wikipedia.org/wiki/Chicken_riggies (see link below for his sauce - it's towards the end of the video) is not the same as the one he's making. Rachael Ray has one (I didn't know she was from upstate New York originally) but it looks like ordinary red sauce. I almost bought some at the festival this past weekend, but I opted for something else instead, thinking I could easily make the riggie sauce at home. Hahah, trick's on me. I think it might've had vodka in it, but it was definately a golden-orange, cheesy-looking sauce. The server did say it did have tomatoes in it though (maybe bits of sun-dried ones?). It looked like a cross between Velveta and chicken marsala sauce to me!
