My husband doesn't really like broccoli, but every now and then can't hurt. I was surprised that there were no T&T recipes for broccoli. Can anyone share a couple?

 
An old favorite at our house: Broccoli n Ziti Casserole

Serves: 4 as a main course, 6 as a side dish.

* Ingredients 2 Cups Ziti Pasta (cook as directed on package)
* 10 Ounce Package Frozen Broccoli Flowerets (thawed)
* 2 Tablespoons Olive Oil
* 1 Small Onion (sliced)
* 1 Clove Garic (minced)
* 1 15 Ounce Can Stewed Tomatoes
* 1/2 Teaspoon Dried Basil
* 1/2 Teaspoon Dried Oregano
* Salt And Pepper -- to taste
* 4 Ounces Grated Cheddar Cheese
* 1 Tablespoon Flour
* 1 Ounce Grated Cheddar Cheese

Directions

Mix the 4 oz grated cheddar cheese with the flour and set aside.

Heat the oil over medium-high heat in a large skillet. Saute the onions and garlic. Add tomatoes & seasonings. Simmer 10 minutes, over medium heat. Stir in thawed broccoli, simmer another 5 minutes. Add cheese, stir until melted.

Add the cooked pasta, pour into a lightly sprayed 9x9 baking pan, top with remaining cheese. Bake at 350° until cheese is melted & sauce is bubbling.

This is a favorite in our home. You can certainly use only broccoli if you would like. Very forgiving recipe and great taste! ((Thanks again Charlie!!))

Colorful Vegetable Casserole

3 cups cauliflower flowerets
3 cups sliced carrots
3 cups broccoli florets
1 cup mayonnaise
1/4 cup finely chopped onion
3 tablespoons prepared
horseradish -- (2-3 Tbls)
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup dry bread crumbs
2 tablespoons butter -- melted
1/8 teaspoon paprika

Place cauliflower and carrots in a large
saucepan; add a small amount of water.
Cover and cook for 3 minutes. Add broccoli;
cook 4-6 minutes longer or until all the
vegetables are crisp-tender. Drain.
Combine mayonnaise, onion, horseradish, salt
and pepper; add vegetables and mix well.
Pour into a greased 2-qt. baking dish.
Combine bread crubms, butter and paprika;
sprinkle over vegetables. Bake, uncovered,
at 350 degreees for 25-30 minutes or until
heated through.
