My son wanted cornflake cookies, the kind that are sorta shortbread-y. I made a recipe from an aunt, and it was okay, not great. Needed salt, needed more cornflakes, needed more something.

Got a good one?

 
Are you interested in a fudge brownie that also uses cornflakes?

I'm pretty sure I saw a rocky-road type of brownie that included cornflakes on the same site the provided 'Lemon Mousse Cookies'. If you are - I'll find it for you.

My family enjoys these cookies. Reminds one of a Pecan Sandie

Crispy Oat Cookies
1 cup butter or margarine, softened
1 cup sugar
1 cup firmly packed brown sugar
1 egg
1 cup vegetable oil
1 tsp. vanilla extract
3 1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup regular oats, uncooked
1 cup crushed corn flakes cereal
1/2 cup flaked coconut
1/2 cup chopped pecans or walnuts
Cream butter; gradually add sugars, beating well at medium speed of mixer. Add egg, and beat well; add oil and vanilla, mixing well. Combine flour, soda, and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients. Shape dough into 1 " balls. Place on ungreased cookie sheets, and flatten each ball with tines of a fork. Bake at 325 15 minutes. Cool slightly; remove from cookie sheets and cool. Yield 10 dozen.
From Southern Living 1990 Annual Recipes. The recipe book calls this one of the South's best cookies.

 
Thanks for the recipes! (Did you notice they are quite similar?) Made Gail's tonite...

It's a wonderful cookie, kinda like a chewy oatmeal, with some extras, like the coconut and corn flakes. I think these are probably better when soft and chewy, instead of crunchy.

My son did love these right out of the oven - definitely a keeper recipe. However, it's not quite the recipe I was looking for, so I guess I'll keep looking smileys/smile.gif
