ISO: Iso a good Enchiladas recipe please. craving today's. one of those can't eat enough days.

In Search Of:
Cheater chicken enchiladas we love

For 6-8 enchiladas
8 corn tortillas
oil
shredded rotisserie chicken
1 jar Trader Joe Hatch Chili Salsa
1 can (15oz) green enchilada sauce
1/2 cup heavy cream
1/2 cup sour cream
1/2 tsp salt (or a bit less)
additions - refried beans, rice, tomatoes, chopped onions, diced jalepenos or chilies, chopped black olives, cheeses (pepper jack, cheddar, feta), cilantro (fresh or dried)
cheese to sprinkle over top
Method:
1. Warm tortillas in hot oil for a second or two on each side. Place aside
2. Mix sour cream and heavy cream in microwave safe dish. Add salsa and enchilada sauce - mix well. Add salt a little at a time (taste before adding all of it). Heat in microwave until slightly warm, stirring frequently.
3. Use leftover oil from tortilla warming pan to grease 9x13" casserole. Spread several spoons of sauce in the bottom.
4. Build enchiladas from chicken and whatever additions you love from above. Spoon sauce over contents and fold tortilla over mixture. Place enchiladas into casserole with fold on underneath.
5. Cover enchiladas with sauce and bake at 375 degrees until hot and bubbling - 30 minutes or so.
6. Sprinkle with cheese and bake 5 minutes longer to melt. Serve with sour cream, guacamole, sliced olives and tortilla chips (to dip)

I have been getting all these different cravings at weird times since having the transplants so I keep a few different things around, the sweet thing blows me away. Well they would like some more weight on me I am trying didn't realize how hard it is. The main goal is getting my muscles back surprising how much I lost which is everything. Doing really good 10 mths now it's hard to believe where I was last year. Thanks for helping me with ideas. Getting taste buds back it's amazing how much we lose and don't realize it until it's gone. So so happy with life
