Hi Luisa, you have time to make homemade raviloi now, hmmm? ;o) Rec: Wild Mushroom Mixture
2 Tbsp butter
1/4 cup chopped shallots
12 oz each wild mushrooms, roughly chopped
3 Tbsp dry sherry, white wine or water
2 tsp chopped fresh thyme leaves
salt and pepper
1/4 cup reduced-fat cream cheese
In a pan, place butter and shallots, and cook over medium heat until almost done. Add mushrooms, sherry, and thyme; cook, stirring occasionally until mushrooms are soft. Add salt and pepper to taste.
Remove from heat and stir in cream cheese until blended. Use as a topping for broiled stuffed mushrooms, or place under skin of chicken before baking for a wonderful flavor. Also nice as a filling for tarts or omelets (I think it would be great in ravioli too).
