Absolutely. After searing, add a bottle of red wine and perhaps some beef stock.
This isn't really a recipe, just an idea:
Brown some onions and carrots in the searing pan and add them to the beef, then deglaze the pan with the wine to get all the browned bits into the crock pot.
Add an herb bouquet or just a big pinch of dried thyme, and maybe some tomatoes or tomato paste.
When the beef is done, strain and degrease the juices and thicken them with a little flour-butter paste, simmering.
Some sauteed mushrooms could be added to the sauce.
