I am still low carbing so was thinking of a macadamia and parmesan crust or similar. Anyone have a T&T recipe to recommend or maybe one with a nice glaze (that can be adapted to stevia. smileys/smile.gif

They're in Hawaii right now and he caught a 550 lb marlin. Do they eat marlin? smileys/smile.gif

This is a wonderful glazed Salmon recipe Lacquered Salmon with a caramelized balsamic sauce

Can't imagine it without sugar but maybe it will work.....it is a great recipe. I think someone here posted it a very long time ago:

LACQUERED SALMON WITH A CARAMELIZED BALSAMIC SAUCE

1/3 cup sugar on a plate
4 salmon filets
1/4 cup chicken broth
1/4 cup low-sodium soy sauce

for sauce: 1/2 cup Balsamic vinegar and 1/2 cup low sodium soy sauce, cooked in saucepan until volume is reduced to 1/3 cup.

Dip salmon filets in sugar (one side only) and fry sugar side down in very hot pan until caramelized. Turn over in pan, turn down heat and add chicken broth and soy sauce. Cover and let finish cooking- about 5 minutes. Put salmon on plate and drizzle with sauce.

 
We cook salmon every week, sometimes twice. Simple is best. Favorite rub and pan fry grill or broil

Sorry - I am not completely tuned in to how low the "low carb" plan is.

I usually think of the obvious offenders like potatoes, rice, noodles, etc. Since the flour is only used for dredging the fish - it wouldn't even be the entire amount. I'm sure you could use whatever you typically use in place of ap flour for the dredging. Almond or other nut flour? You could also just skip that step.

Are tomatoes allowed? Something like Tess posted with her roasted tomatoes would be fantastic with the fish. I usually do a quick cooked topping with tomatoes, garlic, basil, olive oil and butter. Goes well with salmon.

 
Bub makes a lemon-garlic butter and bastes it on the grill. It is absolutely delish!

He uses a lot of garlic and cooks it in the butter. Then he seasons it with seasoning salt and black pepper. One of my favorites.
