ISO: ISO a T&T Birria recipe, got a bone in goat shoulder from my meat CSA

it's gorgeous and needs a good braise. A friend suggested birria, has anyone made it? I would love a recipe you have tried out.

Interestingly, the two places that make it here use lamb instead of goat. I know that is not traditional.
