ISO: ISO a T&T side dish for a bbq that has no pepper(s) - I don't have access to my recipes...

The AC cord on my laptop died and until I can find a replacement I'm using a back-up laptop - without all my recipes. smileys/frown.gif

My MIL can't have pepper of any type and I've been asked to bring a bbq side dish third hand, meaning I know nothing about what is being served. However, it's my nephew's birthday (30!) so I want it to be delish.

Your mission, should you choose to accept it, is to find a T&T recipe without pepper(s) and post it here. As always, should you or any of your I.M. Force be caught or killed, the Secretary will disavow any knowledge of your actions. This tape/disc will self-destruct in five seconds. Good luck - and Thank You!!!

The BBQ joints around here all have Mac & Cheese & some of them do "loaded baked potato" casseroles.

 
Ever have a dish you liked so much you made it over and over and over again and then got burned out

on it? For me, this is one of those dishes (the version with arugula added). I made it a ton last year until I was sick of eating it, lol. There was just something about the sweet corn salad brightened by lime juice, mixed with the peppery arugula, and creaminess of the avocado that I just kept craving. Took it to several potlucks too where the bowl was cleaned out lickety split.

You really don't need proportions for most of it....it can be made to taste.
