ISO: ISO ? about Peanut Butter cookies (flourless) - discussion from last week

I made them again this morning, and they didn't rise at all! To those who made them, when did you add the baking powder (edited - oops, 'meant powder - my recipe doesn't use either, however), and HOW? Since there was no flour, I just mixed it with about a tbsp of water and mixed it in so it would be incorporated into the stiff dough.

They came out like pancakes! Whaa....? What could've happened? They will make a good ice cream topping, crushed ;o)

Hi Dawn - I'm not sure which recipe you are using, but the one I us calls for soda vs powder, and

I mix it with the egg and add it to the dough. The recipe I use is similar to the one MoNJ posted here, without the chocolate chips and nuts:

Crunchy Peanut Butter Cookies

MAKES 2 DOZEN COOKIES
Peanut butter binds these supernutty flourless cookies from Southern cook Elizabeth Woodson, a former art director at F&W.


Ingredients

1 cup smooth peanut butter
1 cup sugar
1 teaspoon baking soda
1 extra-large egg, lightly beaten
2 tablespoons finely chopped peanuts (optional)
1/4 cup mini chocolate chips (optional)

directions
Preheat the oven to 350° and position 2 racks in the upper and lower thirds. In a medium bowl, mix the peanut butter with the sugar, baking soda and egg. Stir in the peanuts and chocolate chips. Roll tablespoons of the dough into 24 balls. Set the balls on 2 baking sheets, and using a fork, make a crosshatch pattern on each cookie. Bake for 15 minutes, shifting the baking sheets from front to back and bottom to top, until the cookies are lightly browned and set. Let cool on a wire rack.

I'll give it another try - mine were very chewy and flat. Must be something was old and/or

I didn't measure correctly. Oh, I added brown sugar, but I don't think that would've caused the problem. Funny, too, because I was looking for "flat" cookies about a year ago.

Karma is never on my side ;o)
