ISO: ISO Advise: Does this sound crazy? Making a wedding cake + cupcakes in SC for a wedding in NY?

So this was posted by someone I know on a non food site so thought I'd ask you. Because it sounds sorta crazy to me and many of you have experience in fancy type cakes. So hoped you'd all weigh-in with your experience. Clearly it's a good cause and comes from the heart, but not sure it's doable.

Here is what she posted:

my brother is being deployed in mid-November to Afghanistan, so he and his fiancee are getting hitched Nov. 3. I'm the one responsible for baking all manner of cakes/goodies for family/work events so I volunteered myself for the wedding cake. Per my SIL, she's hoping for a small tiered cake for them and cupcakes for the guests (50-60). They kindly have said that if it's too much to handle, they would be ok with a bakery cake.

Problems, you say? How about they're getting married in NY and I live in SC and will be going to school full time this fall. I have Friday before the wedding to finish the last minute details in NY(such as picking up flowers from the florist), but the cake itself will be made in SC. No way in hell am I driving 13 hours with a completed cake, so I'll assemble it on-site.

I REALLY want to do this for my brother and his bride, but my parents think I'm nuts to attempt it. I'm willing to take advice from flops and winners, if anybody wants to dish.

 
Yes. I feel for her, but this is just too much stress. There must be a zillion wonderful bakeries in

NY. In my opinion her time would be better spent ordering the cake and cupcakes and then relaxing with family in those precious days before her brother is sent overseas.

 
I spent the day before my wedding frosting & decorating my own wedding cake

I just about had a nervous breakdown because of all the other stuff I needed to be doing.

 
If she's set on it, freezing un-iced layers, cupcakes & frosting is doable. Small-tiered

cake for cutting isn't that much to decorate and you can pipe a bunch of cupcakes in a hour. Flowers can hide a multitude of sins.

If they're just trying to save money, I agree...pay someone to do it up there.

On the other hand, if this is her heart gift to her brother and he's going away to war, it can be done.

 
good advice Mar---sounds like she is doing it as a heart gift. freezing the cakes and keeping it

simple would work well for her. recruiting family help for at least icing the cupcakes could be fun too----or not! I did mine the day before and my niece was tickled to help, but my event was quite casual and I didn't stress about it.

 
If she has the fillings and frostings ready to go, she can fill and frost it there and use fresh

flowers to decorate it - it sounds like she's picking up flowers anyway and it takes so little to make a cake beautiful. A pastry bag with a large tip to knock out the cupcakes quickly, then an edible flower on top. Gorgeous and easy.
