Not sure if this will work for you--REC: Apple Butter Bars

I first tried this recipe in 1986 when I was looking for ways to use up the excessive apple butter I had made. I have been making it ever since. Since I love the apple butter filling I have never tried any other filling but I am sure you could probably use your favorite fruit butter, jam or preserves.

Apple Butter Bars
Southern Living 1984 Annual

1 1/2 C flour
1 t baking soda
1 t salt
2 1/2 C quick oats
1 1/2 C sugar
1 C butter, melted
1 1/2 C apple butter

Combine flour, soda, and salt in a large bowl; add oats and sugar. Stir in butter and mix well. Press 1/2 of mixture into a greased 13 x 9 pan; top with apple butter. Sprinkle with remaining crumb mixture, and press in gently with a spoon.

Bake at 350°F for 55 minutes or until browned. Cool and cut into 36 bars.

Note: I usually add some coarsely chopped walnuts to the crumb topping before spreading it on top of the apple butter.

Apple and Almond Bars

This easy apple bar is just right for snacking out of lunch boxes. Make the Brown Sugar Icing or simply sprinkle icing sugar over these spicy bars.

Ingredients

BARS:

• 2/3 cup (150 mL) Raisins
• 2/3 cup (150 mL) Water
• 1/3 cup (75 mL) Butter
• 1 cup (250 mL) Firmly packed dark brown sugar
• 1 tsp (5 mL) Vanilla
• 1 Egg
• 1-1/2 cups (375 mL) All-purpose flour
• 1/2 tsp (2 mL) Each baking powder and soda
• 1/2 tsp (2 mL) Cinnamon
• 1/4 tsp (1 mL) Nutmeg
• 1/4 tsp (1 mL) Salt
• 1-1/4 cups (300 mL) Peeled, cored finely chopped apples
• 1/2 cup (125 mL) Chopped unblanched almonds


BROWN SUGAR ICING:

• 1/4 cup (50 mL) Firmly packed dark brown sugar
• 3 tbsp (50 mL) Butter
• 2 tbsp (25 mL) Milk
• 1/2 tsp (2 mL) Vanilla
• 1-1/2 cups (375 mL) Icing sugar

Preparation

Grease a 13- x 9-inch (3.5 L) cake pan and dust with flour.

BARS: In small saucepan, combine raisins and water and bring to boil, uncovered. Remove from heat and, stirring periodically, let cool while preparing batter.

Cream butter with brown sugar until well blended; beat in vanilla and egg.

Sift together flour, baking powder, soda, spices and salt. Mix into creamed batter alternately with raisins and water, making 3 additions of dry and 2 of liquid. Stir in apples and nuts (batter will be thick). Spread evenly into pan.

Bake in 350°F (180°C) oven for 25 minutes or until firm to touch.

BROWN SUGAR ICING: In small heavy saucepan, bring brown sugar, butter and milk to boil; remove from heat and beat in vanilla and icing sugar, adding about 1/2 cup (125 mL) at a time. Let cool slightly and spread over cooled cake.

Alternatively, sieve 1/4 cup (50 mL) icing sugar over cake.

Store in airtight container.

1/2 cup butter
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup flour
1/4 teaspoon each cinnamon, nutmeg and ginger
1 large firm apple, cored and finely chopped
1/4 cup chopped nuts
1 cup semisweet chocolate chips

Preheat oven to 350 degrees F.

Cream butter and sugar. Beat in eggs and vanilla extract. Sift flour and spices. Add to creamed mixture. Fold in apple, nuts and chocolate chips. Pour into greased 9-inch square pan. Bake for 30 minutes until done.

APPLE BROWNIES

2/3 c. butter
2 c. flour
1 3/4 c. brown sugar
2 t. baking powder
2 Eggs 1 t. vanilla
1/2 c. nuts 1/4 t. salt
1 c. apples, cored and finely chopped
Cream butter and sugar, add eggs and beat until well mixed.
Add vanilla and mix . Sift in dry ingredients and beat until
smooth. Add apples and nuts and mix gently. Spread batter
in lightly greased 9x13 pan. > 350' for 30-35 minutes. >
Cool before cutting > Roll in or sprinkle with 10x sugar
