Hi Andrea,

I tried to send you a PM, but of course it didn't work.

Just wanted to let you know that I made the Chocolate Espresso Sandwich Cookies again today, and they're even better than the first time. I like them more and more - they're so delicious. I still haven't made the filling, but I really like them just the way they are.

Hi Meryl - they are on my list to make, although I probably won't get to them until....

after Thanksgiving. I'm glad they are good. Did you add chocolate chips again? My daughter LOVES chocolate, so I think I might add them when I make them.

Hi Andrea, I've been doing most of them plain, with some chocolate chips added to the last batch. I

like them equally, with or without, although my husband prefers them chipless. Plus, I don't add a lot of chocolate chips - I usually end up with just a few chips per cookie, but that's just personal preference - I wanted these particular cookies to have more cookie and less chips.
Maybe try some with and some without if you're going to add a lot of chips, so you can compare the difference in taste and texture? Either way, they're really good!
Are you going to make the filling?
