never filled cookies. Made the Homemade Oreos today and, although they look wonderful, I'm dieting and DH can't eat them all (even though he loves them). Can I freeze some or do I share with the neighbors?

I have frozen several kinds of filled cookies. As a matter of fact, I prefer to do that for some that I make at Christmas. I think they stay fresher than putting them in tins. I have frozen them with both cream filling and jelly filling with excellent results.

 
I agree, it should be OK. I even think the smittenkitchen blog mentions freezing them.

The filling is a stiffer filling than most, so the freezing shouldn't affect it much. I did notice that when I ate one that was about a week old at room temp, the filling had dried out a bit and crumbled slightly when I bit into it, but it was still good---even more dunkable!
