We ate dinner at Simon's tonight and they have a new fresh menu. On that menu was a salmon dish called "Cedar Wrapped Salmon". I have to say it was so totally awesome.

They rub it with their standard rub which is nice, not too spicy but flavorful. Then they lay some fresh asparagus on top, and wrap it up in a soaked, thin sheet of cedar (kind of like a veneer). Then the fish is roasted and the cedar burns a bit giving the fish a wonderful, but light smoked taste. They serve it over seasoned pasta.

This piece of fish was cooked to perfection ... it was basically medium which kept it moist and flavorful. I chatted with the chef afterward and heaped praise on the dish. He said it would be on the fresh sheet for at least two more weeks. Then, they will be getting ready for the cedar planked salmon when they switch into the summer menu.

Just thought I'd share that experience. The weather may not be cooperating but it sure tasted like Spring on the West side of town tonight. And it didn't hurt that the sky was clear, the Inlet was full of ice chunks slowly floating to the south with the tide, and the Illiamna Range was standing sharply against the sky. The sunset happened just as we were ready to leave.

back in June to do some fishing so I'll be looking for interesting places you and Ang know about!

 
You better plan to stay with us if you're fishing on the Kenai. We even have a boat. Seriously.

 
Amazing Brian. I'll plan to make it there in the next 2 weeks. And isn't the pink sunset glorious

over the inlet and mountains? And the days are getting so long----yay! I'm flying over the inlet tonight to Kenai. Should be a lovely view.
Where do you suppose we would get those thin cedar sheets for use at home?

 
How lovely of you to offer, Ang. We usually have the motor home rental place meet us at the

airport so we can travel around a bit. But we most definitely have to get together! We usually fish Homer Spit and the Russian River. No sure plans yet, though.

 
We're 15 miles from the Russian,and we have hookup for an RV on our property.

Anything else I can entice you with?

Richard ... you are welcome. That dish was awesome and I think it will probably never be as good again. Everything seemed to be just right last night. Let me know how it turns out ... think you can find the cedar sheets?

Cyn ... since I work for the Alaska Department of Natural Resources I should fess up and offer a correction. I was thinking of one thing and my fingers were typing another. when you look out the huge windows at Simon & Seafort's, directly across Cook Inlet you see "The Sleeping Lady", or Mount Susitna which guards the mouth of the mighty "Big Susitna River", certainly one of the most productive salmon watersheds in the world. Just beyond Mt. Susitna, you can see the northern edge of "The Aleutian Range", and that was the range I was citing, not the Illiamna Range. Lake Illiamna is beyond those mountains and there are mountains with that name.

Sounds like you are "ol pros" at fishing the Kenai. I hope you in fact make it up this year, and if you do that we can find a way to have a cook out, or cook in!! A salmon bake sounds good to me. And Ang is trying to make it easy for you too!

Ang .. the sunsets this time of the year are worth waiting for. Good think I do not have the "Simon's view" from my house, because sunsets like this are worth at least a couple glasses of wine!

I have the cedar planks of course. I bought a few last year at Costco at the end of the year. But, no, I have no idea where those sheets of cedar might be found. I have not yet Googled it. But, I am pretty much "up" on the cooking stores around town and cannot remember seeing them. Let me know if you have any luck with it.

PS ... I will be back to Simon's in the next two weeks too!
