I feel like I have been in hibernation for sure. Actually I have been travelling quite a bit in the past six weeks. One 10 day trip to Las Vegas, and three trips to Fairbanks.

I am in Fairbanks now, and last night was invited to a staff member's house for dinner. The caveat was I had to cook it!! That was a challenge I gladly accepted. They had a bunch of friends coming over, and chili was the dish of choice. I accepted the challenge, but changed the theme from chili to chile, and went shopping at the local Fred Meyer's. Fortunately they have a pretty good selection of New Mexico chile, both powdered and whole, dried. Got a bunch of stuff and made an awesome pot of New Mexico Red.

I will admit it had a few different ingredients in it. I normally do not use tomatoes or beans if I want the "real" stuff. But since it was a crowd I let caution fly to the wind. I made the red sauce first, then added some pork, and caribou. The caribou was really good it it, and fried up well in the pork fat. Then I reconstituted five packages of various dried pepper varieties and pureed them, adding the juice to the pot. Also added the sauce from a can of Chipotle's in sauce.

Bottom line is it came out well. It had that burn that I always look for, i.e., not real spicey when you put it in your mouth, but, after you swallow it the burn builds slowly and peaks several seconds later. Even folks that cannot handle hot and spicey went for seconds.

And on the way back to my hotel room the Northern Lights were out and very bright. So all in all it was a good night. Except for the fact that my ladies were back home in Anchorage on Valentine's Day. But, I found out they went to Simon & Seafort's for the half price appetizers and had a great time too.

I see you are in Seattle for a week. They have a "Ruth's Chris" there in one of the hotels on the Grayline route. And a place called "Jasmine" right near the old Four Season's Hotel (I think its the Fairmount or something like that now) and across the street from the Hotel Monaco is a pretty eclectic asian place.

That sounds like some rockin' chili! Here's a restaurant review and broke leg update--

I too, was in Seattle. Had great checkup on leg, able to put some weight on it now, three more weeks of crutches and then three weeks of just brace. Then start building strength to get back to work.
New (to me) restaurant in Pacific Place named Mexico. Wonderful food!! More Veracruz style. Had some white king salmon and Alaska shrimp kebobs with a poblano and pomegranate marinate and perfectly seasoned rice with fresh veggies.
Went back for lunch yesterday and had crab enchiladas with a very light creamy, cheesy sauce. Chunks of Dungie!!! Fresh tortillas and again perfect rice and beans.
Sure miss the northern lights in the interior. We get some good shows down here,but not the color.
I sure understand the hibernation state, even here though the weather is milder, it still sets in.
I'm ready for spring, ordering my kaffir lime tree today and get begonias going inside to plant out later.

So good to hear from you. I must invite myself over for an Anc version of your chile.

Had a great time in Seattle. shopped and ate and visited the grandkiddies. DH had excellent Dr appt results. Stayed at the Paramount and ate at the Dragonfish. Good asian/fusion stuff. If you were out up in Fairbanks you most definitely were not in hibernation! BRRRRR cold up that way.

 
Nan, I caught the NW Garden show. Picked up some Asian lily bulbs and had to tie my hands

up after that so I couldn't buy more. Thought about looking for a Meyer lemon tree, but then I snapped out of it. I did buy a 3-pack of Meyer lemons and they have a place of honor in my fridge. I will harvest some seeds and try to start them. If you want some, let me know, but with your travel schedule it may be tricky keeping it alive. sorry we didn't connect. The dr appts took longer on Wed than we anticipated. I love that Mexican Restaurant. It was too busy when we tried to go to it, so we ate at the Dragonfish at our hotel. Do you ever eat at Von's in your hotel? I found the Macrina bakery, but it was too busy for me to try it. Such great news about your leg!

cannot believe how much I ate. Then walked out to Moose yesterday and had a steak and eggs breakfast. Crutches are more exercise, but not that much!
Thought about garden show, but was still a little shaky in crowds.
Ordered my kaffir lime!!!!!
Going back down to Seattle March 28th,want to catch the food show. Will have brace off then.
May take ferry?
