I have not tried one of the recipes yet so I can't answer with regard to the amount of yeast. When I get around to it I will certainly let you know.

Edited - Just went to Fleischmann's website and watched a video of the test kitchen making one of the recipes and she used two packets of the rapid rise yeast. I guess the recipe is correct. Have a look at the video on the website. I will link it for you.

 
It seems like all the recipes use the 2 pkg of yeast. I just think it would be too yeasty for such

small cakes. was wondering if anyone else thought so. It would make them rise fast, but that just seems like so much yeast or the small amount of ingredients. thanks for looking.
