ISO: ISO: bacon-wrapped dates stuffed with almonds ?

I had the most amazing tapas at a restaurant in Las Vegas. I know how to do the date stuffed with an almond, wrap bacon, broil, etc. But this dish was topped with a little crumbled blue cheese and a wine reduction sauce... hoping someone might have something similar?? We all went ga-ga over it and I'd love to make it for Thanksgiving appetizers.

oh.... it was a balsalmic reduction sauce...

It was the Firefly restaurant on Paradise Road in Las Vegas and is described on their menu as:

Stuffed dates (bacon-wrapped, smoked almond, balsamic reduction)

 
Here's for the almond stuffed dates...I have to search more for the sauce...

Almond stuffed dates wrapped in bacon

Ingredients:
4 ounces blanched whole almonds
1 pound Pitted dates
1 1/2 pound sliced bacon -- cut into thirds


Directions:

Press a whole almond into each date. Wrap one piece of bacon around each date and secure with a toothpick. Line a cookie sheet with aluminum foil. Place dates on foil and bake at 400F oven for 12-15 minutes or until bacon is crisp. Remove to rack or paper towel; drain. Serve warm.

REC: Balsamic Reduction

Well, not exactly a recipe - but this is easily done and delicious. Proportions are approximate:

1/4 cup balsamic vinegar
1/8 cup water
2 T. brown sugar
1 T. lemon juice

Reduce in pan until it becomes thicker and syrupy. Can keep in the fridge for several days.

cheezz, do you have a juicer? One of the best ones I've made is

sweet red peppers juiced, then reduced, then augmented with thick balsamic juice and a bit of chicken stock. Reduce to drizzle-thickness.

Fresh pepper grinds and salt (if necessary, depends on the stock).

Goes with everything.
