One of my favourite dishes at our "usual" Chinese restaurant is "Baked Chicken with Rice in Coconut Sauce". It is a casserole type dish with a custardy rice on the bottom and the chicken (slices of boneless thighs that have been well seasoned) on top. The chicken has a bit of a "crust" from either being broiled or possibly seared first and then put on top, and is very flavourful- (maybe Knorr's "Spicy Bake Mix" that I found in the Chinese grocery). There is just a hint of orange cheddar sprinkled on top as well. The rice has shreds of scrambled egg, sometimes bits of mango, and small pieces of water chestnuts in it, and is the consistency of rice pudding- but not sweet. It is a creamy/yellow color - so I assume no or little soy sauce; maybe a bit of turmeric or saffron? It is also not spicy other than the chicken coating. Does anyone know of a recipe for such a dish? Of course I have asked for the recipe but they won't give it out. I've been told the restaurant owners are from Hong Kong.

I'm just not confident enough to experiment too much without some sort of recipe to guide me. It's the custardy rice I'm having the most trouble with. I hope this sounds familiar to someone.

 
Sounds more Indian than Chinese - sounds fabulous! I'll have to look at my restaurant for it.
