I bought prepared salad from our local Wegmans grocery store. It is called "Baked Potato Salad". Had potatoes, sour cream, possibly mayo, scallion, chedder cheese and bacon. It was wonderful. Anyone have a recipe? It would be easy enough to duplicate but a recipe would be nice. Thanks!

PS- This salad was not warm or "baked". Just called "Baked Potato Salad" because it contains the same ingredients. Most recipes I found via Google were warm, "baked" dishes.

 
Here's a roast potato salad but a little different from what you enjoyed.

Roast Potato Salad

(Canadian Living Magazine, July, 2006)

4 Yukon gold potates
3 sweet potatoes
3 tbsps vegetable oil
1/2 tsp salt
3/4 cup frozen or canned corn kernels
1 sweet red pepper, diced
2 green onions, finely chopped

Dressing

3/4 cup Light mayonnaise
1/3 cup buttermilk
1/4 cup chopped fresh coriander or parsley
2 tbsps lime juice
2 tbsps minced chipotle peppers in adobo sauce
1/2 tsp ground cumin
1/4 tsp each salt & pepper

* Peel and cut Yukon and sweet potatoes into 1 inch cubes; place in large bowl. Add oil and salt; toss to coat. Spread on large greased rimmed baking sheet; roast in 425 F oven, stirring once, until tender and golden, 60 to 65 minutes. Let cool on sheet.

* Dressing: Meanwhile, in bowl, whisk together mayonnaise, buttermilk, coriander, lime juice, chipotle peppers in adobo sauce, cumin, salt and pepper.

* In large bowl, combine potatoes, corn, red pepper and green onions. (Make ahead: Refrigerate potato mixture and dressing in separate airtight containers for up to 2 days.) Pour dressing over salad; toss to coat. Makes 6 to 8 servings.

a few weeks ago, here. As soon as I get a chance I will check and will post the recipe if it's not here.

As Sylvia said, Russett potatoes are the key. Lots of starch --- but ooooh, bad for my blood sugar!

 
Rec: "Stuffed Potato" Potato Salad... Here's Dawn's post from last December. Hard to find because

it didn't say baked, but it came up using her name. Looks yummy and like what you're looking for.

A local grocery store advertised this, have to try it tonight. Tweaked my own recipe and came up with this:

3 lbs baked potatoes, peeled and cooked
6 slices of bacon, cooked and crumbled
3 scallions, diced
1/2 c sour cream
3/4 c light mayonnaise
2/3 c cheddar cheese, shredded
1 tsp salt
1/2 tsp freshly fround black pepper
3 Tbsp olive oil

In a large bowl combine sour cream, mayonnaise, salt, pepper, and oil. Add the potatoes, bacon, and scallions. Toss slightly. Garnish with more scallion pieces. Best served the day after you make it.

Yes, Wegmans is wonderful....

Lots of choices, fresh fresh food. I love it. I try not to go very often because I spend way too much money!

Ithaca. Well about 10 minutes outside......

Our Weggies is HUGE. We have had one for a while but they rebuilt and explanded. With Cornell and Ithaca College right here we luckily have great shopping and tons of restaurants.
