at Sam's and I was looking for a way to salvage it. (I should have taken it back!)You suggested Ropa Vieja and yesterday we wanted a big project to keep us busy so we made it. We had it today wrapped in small flour tortillas with slices of avocado and sour cream and Sofrito rice on the side. Delicious! We look forward to using it other ways also...we really enjoyed it. The meat is still a bit chewy but at least usable. We'll freeze in portions sizes so thank you barb!http://www.finerkitchens.com/swap/forum/index.php?action=display&forumid=1&msgid=6151

Orchid, we are thinking alike!! I made it yesterday also! I used

Daisy Martinez recipe; I served it with rice and beans with a mixed green salad with Avodados. I have made it many times; never following the same recipe. Last nights was by far the most tender; but it was also the most I have paid for flank...(Purchased at Wegmans on Thurs...I was really in the mood for this!)

I have had great success making it in the crockpot. I add all the sauce ingredient; cook in crockpot, then add the peppers etc... (The easiest way)

I am so glad you enjoyed it!!!

Regards,
Barb
