love your Blueberry Orange Muffin recipe. I don't know if you remember that I didn't have the orange extract on hand and wanted to know if you thought it would be OK to use more orange zest. Well I did and they are so good. I halved the recipe and to the liquid I added a good 2 tablespoons of finely minced orange zest. And also in the glaze for the top. I baked them in my 2 mini pans which made 24 mini muffins. I have them frozen and in a bag so we can just take out 1 or 2, what ever we want. My husband loves them and the size is perfect for just a couple of bites. Blueberries are in season right now so I've actually made them several times plus he takes extra to work to give to his favorite girls in the office! Hey! Yeah Orchid! I am so glad you all are enjoying them so much! My neighbor

came over the other day for a lesson on how to make them. Her husband is the one who bought the entire tray of them at the rummage sale. When they were gone he wanted more. His wife tried the recipe but they weren't quite right so she came over, got a lesson and now keeps him well stocked--since, like you said, it is blueberry season.
