ISO: ISO Boston Cream PIe recipe

In Search Of:
Ellen, here is one that was posted on EPI. I made it once and (m)

it was very good.
CAKE:
3/4 cup unsalted butter, softened
1 1/4 cups sugar
1 tsp. vanilla
2 lg. eggs
2 cups cake flour
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk

CUSTARD
3 Tbls. cornstarch
1/3 cup sugar
1 cup milk
3 lg. eggs
1/2 cup heavy cream
1/4 tsp. salt
1 vanilla bean, split lenghtwise
3 Tbls. unsalted butter

GLAZE
6 oz. bittersweet chocolate, broken into
pieces
2 Tbls. water
2 Tbls. unsalted butter
1 1/2 Tbls. lt. corn syrup
1/4 tsp. salt

Preheat oven to 350F Grease or spray with
Pam, a 9" springform pan.

Cream butter, sugar, and vanilla until the mixture is light and fluffy. Beat in the eggs
one at a time. Beat well after each addition.
In another bowl, sift flour, baking powder, and salt. Then beat this mixture into the creamed
butter mixture, alternating with the milk,
beginning and ending with dry ingredients.
Pour into prepared pan and bake in the middle of the oven for 50-55 minutes, or until tester comes out clean. Cool cake in pan on a cake rack.

Prepare custard. In a saucepan whisk together cornstarch, sugar and milk, then add the eggs, cream and salt. Whisk until smooth. Scrape the seeds from the vanilla bean into the mixture and save the pod for another use. Stirring, bring the custard to a boil over medium heat, and then whisk in the butter. Remove from heat and let cool completely, whisking occasionally.

Prepare the glaze. In a double boiler with water barely simmering, melt the chocolate with the water, butter, corn syrup and salt. Stir until smooth, remove from heat.
(You can improvise with a metal bowl or smaller pan set over the simmering water.)

Split the cake in half, top the bottom half with the cooled custard, then place the top piece of cake on top of the custard, cut side down. Pour the glaze on top and spread to cover, letting the extra drip down the sides. Will keep for one day, refridgerated and loosely covered.*

NOTE: I was able to keep it longer than one day and it was fine.

Hope this answers your request. Enjoy

Thanks. I'll give it a try.

and sorry about the double posting. My computer's acting up and everything is going very slowly today.
