Hi gang! Calling upon you once again for your help! I need a tried & true really good brocolli cheese soup. My friend is going through cancer radiation, and she is too tired to cook, so I'm making soups for her. I know she loves brocolli cheesee soup so I want to surprise her! Thanks in advance!!

 
Not broccoli soup, but lots of very good comfort soups up in T&T.

Make sure she can have broccoli. Some medications do not like the vitamin K. So very thoughtful of you.

 
I LOVE Panera's Broccoli soup. Will be trying this weekend and will let

you know how close it comes to the real thing.

I found the list of ingredients on the Panera site - their cheddar sounds like it's processed:

Ingredients: Water, whole milk, broccoli, cheddar cheese (milk, cheese culture, salt, enzymes, water, sodium phosphate, milkfat, cellulose powder, salt, APO-carotenal-color), heavy cream, onion, carrot, chicken base (chicken meat including natural chicken juices, hydrolyzed soy and corn protein, potato flour, natural flavorings, autolyzed yeast extract, carrot powder, turmeric), modified food starch, unbleached enriched flour (wheat flour, vitamin C (ascorbic acid added as dough conditioner), enzyme added to improve baking, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), butter (sweet cream, annatto), canola oil, salt, dijon mustard (water, black mustard seed, vinegar, salt, spices, citric acid, potassium bisulfite), spices, Tabasco (vinegar, red pepper, salt).

REC: Cheese and Broccoli Soup

I have made this a few time and it is wonderful and EASY. The Velveeta is what makes is so good. I don't think I used the full 1 tablespoon of garlic powder, and I also puree with immersion blender before adding the cornstarch. Delightful.

Cheese and Broccoli Soup

INGREDIENTS:
1/2 cup butter
1 onion, chopped
1 (16 ounce) package frozen
chopped broccoli
4 (14.5 ounce) cans chicken broth
1 (1 pound) loaf processed cheese food, cubed
2 cups milk
1 tablespoon garlic powder
2/3 cup cornstarch
1 cup water

DIRECTIONS:
1. In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
2. Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
3. In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.
