It was wonderful with mashed potatoes. I'll be making it again, with thick bacon next time. (It took a while to separate all the little pieces of the thin stuff I used, turning it from a 5 minute recipe to 10.) I did think it was an odd combination while putting it together and I expected it to be too vinegar-y, but it was perfect. Thanks!

I would never think of using it for dinner with mashed potatoes! It is a great idea. I make it for brunches, generally with a big eggy, cheesy casserole on the side and a bowl of cut fruits macerated in Triple Sec and chopped fresh mint.

I use thick, peppered bacon and I cut it when partially frozen so the pieces do not stick together. The first time I made it with thin, "regular" bacon and had the same result- it stuck together too much.

Glad you liked the flavors in this odd combination- whenever I serve it people ask for the recipe.
