I ready'd the smoker, used the trunks of the palm, wrapped the pork in leaves and salted it after 8 hours of smoking.

I have a few friends who "say" they don't like smoke flavour...... WELLL!!!!!!! they went back for 3 helpings of the pork...so GOOD!

No banana trees or did you use just banana leaves? You used palm trunks for the wood? Sounds like a delicious result- I am happy it worked for you.

I was being booted again and again so that message was rather kurt...I used banana palm trunks and I am going to try to post the pics now so you can see what it all looked like....We had 10 over for supper and I've been asked to do this for 2 parties that are coming up...I declined as I just don't have the whole day to spare over the fires with out getting on with my thing...in this case we were building (I had the gardener as you'll see in one pic, he cut the trunk and leaves) "hurricane bunkers" for the ducks and chickens....? Yes!, short of taking them into the secure room in the house with us.... what??? am I supposed to do with these birds come the time of a nasty blow?
