Almost every Chinese Restuarant I have been to in Baltimore serve the same (what I am calling) Chinese Cabbage Salad, however when I try to locate a recipe on the net they all seem to have Onions and/or noodles. What I am looking for is a mix of chinese cabbage, only the white part, a few slivered carrot sticks and a dressing of what seems to be vinegar & sugar & I know not what else. It appears to be something that you can mix up ahead of time. This is not an item that you order, but it is brought to you while you are awaiting the dishes that you have ordered. Can any help me. PLEASE Thank you.

 
Napa Cabbage Salad?

Hmm...at chinese restaurants around here, they don't seem to serve this type of salad. However, this is a recipe that my friend gave me a couple years back...that's pretty yummy. there's no carrot sticks in it, but i'm sure you could add some for more color?

Jackie's Napa Cabbage Salad:

Dressing:
1/2 Cup Oil
1/4 Cup Rice Vinegar
2 Tbsp Soy Sauce
1/2 Cup Sugar
Boil everything for about 1 minute in a sauce pan. Let it cool before
mixing - takes about 20-30 minutes to cool.

Crunchies:
2 Packages of crushed ramen noodles, minus the seasonings
1/2 Cup sliced almonds
1/4 Cup Seasame seeds
3 Tbsp Butter
Toast in a pan. The seasame seeds burn pretty quickly, so put those into
the pan when the ramen noodles and almonds are just about done.

1 Head of (Napa) Cabbage
Bunch of green onions
Slice finely or to whichever size you prefer I suppose.

Don't mix until just before serving or else the salad will get soggy.

 
Rec: Coleslaw Vinaigrette

I've made this quite a few times, it's yummy and so easy. I usually use regular cabbage but you could certainly give it a try with Chinese cabbage or napa cabbage as we call it here.

Coleslaw Vinaigrette

2 cups shredded cabbage
1/3 cup chopped green pepper (or red bell pepper is nice too...colorful)
1/4 cup snipped parsley
3 tbsp cider vinegar or rice wine vinegar
2 tbsp sugar
2 tbsp salad oil...canola or vegetable oil

Combine cabbage, green pepper and parsley with vinaigrette. Chill at least 15 minutes.

Note: In place of cabbage, green pepper and parsley you can use the prepackaged mix from the grocery.
