On today's Road Tasted show (Paula Dean's boys), they visited Key West and a place called Henrietta's. She is famous for her coconut strips -- invented when her customers ate the top of her coconut bread and threw away the rest. It is very thin - like an unrisen bread dough with a coconut/sugar topping, baked until crispy.

Anyone know how this is made?

I agree - looked absolutely Fantastic! And i was just down in KeyWest a few weeks ago... I did go

to the keylime pie place - didn't love it - nlb's recipe is still my favorite. We had lunch about 2 doors down from Henrietta's - and can't BELIEVE I missed out! I wish i had seen that episode first!

Does this help? On The Food Network, type in "Caramel Strips" and you will find a recipe for the following with directions for making Coconut Strips. I didn't see the show, but from the picture they looked as though they were fried.

It's a very thin dough - like pie crust would be, but it's definitely a bread-type crust. The coconut on top was coconut, sugar and water (I think), boiled long and slow, then poured on the rolled-out dough and baked until golden.

 
The trick would be to scrap off the coconut. If it's brown, the strips may be

(Insert: "underneath" so the title reads: if it's brown underneath, then it's...)
baked first, then the coconut mixure is spread on top and then the strips are broiled or baked.

Do you think they're worth ordering?

 
Here you go... I sure miss NLB's and her recipes... they are some of my fave T&T.

nlb's Famous Key Lime Pie

Crust:
1 1/4 c Graham cracker crumbs
2 T granulated sugar
1/3 c butter, melted and cooled

With fork, mix sugar into crumbs. Add melted butter and combine until well mixed.
Press onto the bottom and sides of a 9" pie tin.

Bake the shell in the middle of a 375 degrees F. oven for 7 minutes.
Cool on a rack and chill
Preheat oven to 350 degrees F.

Filling:
14 oz. can Eagle Brand Sweetened Condensed Milk
3 large egg yolks
1 generous t grated Key Lime rind
1/4 c + 1 t fresh Key Lime juice

In the bowl of an electric mixer, add milk, egg yolks and grated Key Lime rind.

Mix on medium speed until smooth. Gradually add Key Lime juice until thoroughly mixed
and beat on high speed for one minute. Pour into baked 9 inch Graham cracker crust

Bake at 350° F for 15 minutes. Cool on rack and chill thoroughly.

Topping:
1 1/4 c whipping cream
1/4 c or more of confectioners' sugar
1 t pure vanilla extract

Chill metal bowl and wire whisk. Beat cream and gradually add confectioners' sugar until
firm and add vanilla. Put into a pastry bag and pipe onto pie.

Chill thoroughly and remove from refrigerator 15 minutes before serving.
