ISO: ISO: Could someone help me tweak this recipe a bit so that the glaze hardens more?

The recipe below makes a gorgeous glaze - shiny and delicious (I could eat it straight...and unfortunately did:) But I found that the glaze smears a bit when bagged. I need to come up with a harder surface when I have the cookie decorating class for 'girls group' - I don't want them to be disappointed with their creations after taking them home and finding that they messed up a bit.

This is the best cookie icing I have ever used and it hardens nicely for bagging but is not rock hard like royal icing. You will love it. Sugar Baby Frosting from: www.wildwestcookies.com

1 32 oz. pkg. confectioners sugar, sifted

1/3 cup evaporated skimmed milk

1/3 cup white corn syrup

1 teaspoon pure vanilla

1/3 cup water, boiling

Combine milk, syrup and vanilla in a saucepan over heat and add boiling water. Blend together with electric mixer. Add confectioners sugar and continue mixing until smooth. The frosting consistency is similar to a glaze. Color with powdered food coloring for decorating cookies.

Deb, it's the corn syrup that keeps it slightly softer. Try 1/4 C and go from

there.

Several icing suggestions I've picked up along the way: Beauty salons have tall empty bottles. Nip the opening then fill with icing to flood the cookies.

Keep a tall widemouth glass nearby with a damp folded papertowel at the bottom. You can put your pastry bags or bottles upside down and the tips won't fill up and harden. However, this DOESN'T work when the icing is very thin.

Dam method: take some icing, add more sifted powdered sugar to it then pipe around the perimeter of the cookie. Let that harden for a bit (it will harden fairly quickly) and then you can flood the interior without having to worry about dribbles down the sides.

Try melted candy discs in a pastry bag (or bottle) to draw decorations on iced cookies.
Be careful about flavoring though. Some of them come already flavored and that can skew the cookie's final taste.

So I have a batch of the Sugar Baby glaze in the freezer. Do you think if I just add more powdered sugar to it (to dilute the corn syrup) - that may harden it? I have another 100 cookies to make (next batch - when my 'new' KA arrives) and can try it then.

I bought some edible decorating pens so the girls can write messages on their cookies - as well as 'piping' frosting (in pink and white) - it comes in a squeeze bottle (looks like a glue bottle. Also some pretty, glistening sparkles.

I would do a test run with a much smaller amount and kept track of the proportions.

That way you won't waste the entire batch if you add too much.
