to let the children choose. They chose a thanksgiving dinner with a twist on the dessert - they want tiramisu.

Anyway, I can't find any cranberries here - just craisins - anyone have a recipe for cranberry sauce using them. TIA

 
Hi Elaine - I think they're just dried cranberries, so how about this traditional recipe

and just use "reconstituted" Craisins (in boiling water) for the fresh cranberries?

Homemade Whole Berry Cranberry Sauce

1 cup sugar
1 cup water
1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries, rinsed and drained

Combine water and sugar in a medium saucepan. Bring to boil; add cranberries, return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature. Refrigerate until serving time.

Makes 2 1/4 cups: per serving (2 Tablespoons): Calories 51(3%DV), Fat 0grams, Pot. 14mg(
 
Or this one - Tex-Mex Carnberry Salsa

1 cup water
1 cup sugar
1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries
2 tablespoons chopped canned jalapeno peppers
1 teaspoon dried cilantro
1/4 teaspoon ground cumin
1 green onion, white and green parts, sliced
1 teaspoon lime juice

Combine water and sugar in a medium saucepan. Bring to a boil over medium heat. Add cranberries; return to a boil. Gently boil cranberries for 10 minutes without stirring. Pour into a medium glass mixing bowl. Gently stir in remaining ingredients.

Place a piece of plastic wrap directly on salsa. Cool at room temperature and refrigerate. Best if served at room temperature. Makes about 2 1/2 cups.

Or even this one - uses Craisins - Cranberry-Apple Chutney

This one sounds like one I'd like to try...

2/3 cup vinegar
1/2 cup sugar
1 1/2 cups peeled, diced apple
1/3 cup diced onion
1/4 teaspoon each: cinnamon, ginger, allspice
Dash ground cloves
1 6-ounce package Ocean Spray® Craisins® Original Sweetened Dried Cranberries

Combine vinegar and sugar in a medium saucepan. Bring to a boil over medium heat. Add apple and onion; return to a boil. Add remaining ingredients.

Reduce heat to low. Cook for 25 minutes or until apples are tender, stirring occasionally. Serve warm or at room temperature.

Makes 1 3/4 cups.

I think it would end up too sweet. Cranberries are tart and craisins have sugar added

From somewhere out in the internet:
One serving of Craisins, 1/3rd cup (40 grams), has 130 calories and 33 grams of total carbohydrates, which includes 26 grams of sugars and 12% of the RDA for fiber. There is no fat, sodium or protein.

Natural cranberries only have 51 calories, 4.4 grams of sugar and 5 grams of fiber in a 100 gram serving.


 
REC NPR cranberry sauce

I had this one at my sister's 2 yrs. ago. I think I will make it without the sugar.
I also think most of the recipes would be too sweet. But the Cranberry Apple Chutney sounds delicious and calls for craisins. So maybe, time allowing, I will make both.

From NPR, Mrs. Stanberg's Cranberry Relish
2 cups cranberries
1 small onion
½ cup sugar
¾ cup sour cream
2 Tb horseradish
Grind cranberries and onion together. Add remaining ingredients. Freeze. In the morning thaw (but I never remember until almost right before serving. Once you break it up, it defrosts quickly.)
