Karen, I should have said I perfected it to our taste. My mom always made a very
moist, plain dressing, baked in a pan and I was trying to come close to that. Here's my recipe, but it's more like a bread pudding than a stuffing. The original recipe was in an old Farm Journal Cookbook and I've borrowed liberally from Charlie's recipe for Grandma's Bread Stuffing. I would recommend that one for a more conventional stuffing. Here's my recipe, I let the bread cubes really dry out in a slow oven this time, liked it even better.
Baked Dressing
3 eggs
1 cup milk
1 3/4 cup chicken or turkey broth plus 1/3 cup dry milk
1/4 cup or turkey fat
1 cup chopped onion
1/2 cup chopped celery
1/2 tsp poultry seasoning (to taste)
1 tsp sage (to taste)
1 1/2 tsp salt
1/4 tsp pepper
2 quarts day-old bread cubes
1. Saute onions and celery in some of the chicken fat or butter.
2. Mix seasonings with bread cubes.
3. Beat eggs in large bowl. Add milk and broth. Add the bread cubes and mix
lightly. Pour into greased baking dish (8- x 8- x 2-inch). Bake in 350
degree oven for 45 to 50 minutes, or until puffy and golden brown.
