this easy little tapas-that is, if you are an anchovy fan...:Found these on NPR's Kitchen Window website. These would need the really nice high quality anchovies like you get in an Italian deli or fancy food store.

Anchovies With Pickled Green Beans And Olives

Makes 4 servings>

8 cured anchovy fillets

8 Spanish olives with pimiento inside

8 pickled green beans

Toothpicks

Extra virgin Spanish olive oil

Trim the edges of the green beans, then cut them in half. Spear two halved green beans halfway up a toothpick

Wrap an anchovy fillet around an olive and spear with toothpick holding a bean.

Drizzle with oil

Serve pimiento side up.

 
These sound wonderful, but until I get into KC, I doubt if I will be able to find

any high quality anchovies. I am happy to find any anchovies at all. I love anchovies and all things fishy. I am making the Multi-Layered Anchovy Bread that Shaun posted awhile back. We are going to a birthday party on Saturday and I am bringing the bread and some olive tapenade to go with it. I can't wait to make this bread. Thanks for thinking of me Melissa!

 
You're welcome. They have a picture over on Kitchen Window and they are pretty. Would be a nice

salty bite with drinks if you were looking to add a few lighter appetizers to a spread.
