Here's a trick for a quick version of the green sauce that works well.

For every large can of green sauce, add 8 oz of jarred salsa verde and heat until bubbly in a sauce pan.

You get all the spicy flavor without breaking into your spice cabinet.

I could totally add kale, my family likes that! But if I tried to sneak squash in there would

be hell to pay. LOL! They were delicious last night, as always.

 
Second verse, almost same as the first: 1 tall can green enchilada sauce + 2 small cans of diced

green chilies.

Add seasoning at will (I add cumin. ground coriander, salt, pepper). And it freezes well.

 
Seems we all have our tweaks. I add green chilis to the chicken mix, as well as

cumin, ancho chili powder, and cayenne. Going to have leftovers for breakfast.

 
Truly is the recipe that keeps on giving. I also add green chiles, and use corn tortillas.

This is my winter staple for company (or when we used to have people to dinner, pre-baby... When we used to have dinner, really). There are never any leftovers!

 
Finally tried it -Delicious! It's a keeper

I've eaten it twice for dinner and had leftovers for lunch. Still good. DH gives it 5 stars. thanks!
